You are 16 months old now! To celebrate here’s a sweet treat for you little girl.
Mama’s Sweet Potato Oatmeal Chocolate Chip Cookies
1 c rolled oats
1/4 c whole wheat flour
1/3 c raw sugar
1/2 c shredded coconut
1/2 c semi-sweet chocolate chips
1 c mashed sweet potato
1/4 c vegetable oil
1/4 c soy milk
pinch of salt
Pre-heat oven to 350 F
Combine all ingredients in large bowl, be sure to blend well. Drop by rounded tablespoon onto greased baking sheet. Bake for 18-20 minutes. Enjoy!
There really is no substitute for real butter. We were out so I used the veg oil. Also, next time I’d like to try these with brown instead of raw sugar.

Hadn’t thought of mashed sweet taters in cookies — but I like it. Will have to give it a try.
Thanks for your comment! Give it a try, I do recommend using real butter though. Better flavor and a little more crunch that you can’t get with oil.
